Payne’s Pantry: Soup in a Snap

Cold wintry days keep making their appearance, so Soup in a Snap to the rescue!  Homemade soup is always best, but when time prevents, try this fast soup.

 

Equipment needed:

Large pot for soup

Large stirring spoon

Ladle for serving

 

Ingredients:

2-10.5 oz cans, Minestrone soup, undiluted

2-6.7 oz cans slice mushrooms w/liquid

1-14.5 oz can diced tomatoes w/liquid (I like no added salt)

2-10.5 oz cans Chicken Noodle soup

1-10.5 oz can Cream of Tomato Soup, rinsed w/full can whole, 2%, or skim milk

1 pkg frozen peas and carrots

Salt not needed due to sodium in canned soups

3-.3 oz cans Swanson’s chicken w/liquid (Only had sml cans)

Parmesan cheese, grated, if desired (I try to use all Campbell’s Healthy Choice soup versions.)

 

Empty all of above into large pot.  Omit or add items according to your preferences. Simmer and stir often until desired consistency and warmth.

Top w/grated cheese, if desired.

Serve immediately w/oyster crackers or saltines.  That’s it.
