LAKE CHARLES, La. —
Pastry Chef Bill Foltz of L’Auberge Lake Charles and Pastry Chef Arlety Estévez L’Auberge Baton Rouge won three categories at Pastry Live’s 2013 National Showpiece Championship in Atlanta, Georgia on Aug. 27. After seven hours of competition, the chefs took home the top awards for “Best Artistry,” “Best Sugar Showpiece” and “Competitor’s Choice Award.”
The team’s sugar showpiece, “Deceptive to the Eye,” captivated judges and participants in the “The Art of Illusion” themed competition. In addition to winning the highest scores for Best Sugar Showpiece and Best Artistry, team captain Chef Foltz and Chef Estévez also took home the Competitor’s Choice Award.
Pastry Chef Bill Foltz leads the pastry department at L’Auberge Casino Resort Lake Charles. Chef Foltz oversees a team of bakers and pastry cooks providing unique desserts for all L’Auberge food outlets, including eight dynamic restaurants, room service, large conferences and high end guest functions. His twenty years of experience in fine dining, high volume banquets and exquisite chocolate and sugar showpieces with successful leadership positions at 4-star and 4-diamond rated establishments.

Pastry Chef Arlety Estévez brings seven years of pastry experience and great attention to detail to the L’Auberge Baton Rouge culinary team. A member of the opening team of operations, she has led the pastry department with a focus on outstanding guest service and high quality pastries.

The goal of the Pastry Live Showpiece Championship is to raise the artistic and competition skills of more top level chefs, in the process enriching the whole pastry community. It is organized to overcome the time constraints and resource requirements chefs experience in other competitions, making it possible for skilled chefs to participate at the highest level competition without making extraordinary personal and financial sacrifices.
